Peanut Butter Pie

Ingredients:
1 Graham cracker crust
8 ounces cream cheese
¾ smooth (or crunchy) Peanut Butter at room temperature
6 tablespoons unsalted butter at room temperature
2 egg yolks
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
Chopped unsalted roasted peanuts for garnish OPTIONAL
Procedure:
This step is best done with a mixer. Mix cream cheese, peanut butter, butter and egg yolks in a large bowl and beat till combined and fluffy. While beating, drizzle in sweetened condensed milk and beat till smooth. Stir in vanilla. Pour into pie shell (its OK to stick your finger in the batter for “taste testing”), cover and stick it in the fridge for about two hours. The optional peanuts can be chopped and placed on pie for a garnish. And, as always, enjoy. ~ Sam
